This is a lot of very random Head Canon.
This will be updated as time goes of course (New things tossed on at the bottom!)
This list is mostly general head canon that shouldn't change the character too much. Some of it will be used in game as background for him but not a main focus unless needed for plot reasons. Coulson is a private person. He won't talk about a lot of personal things in games.
Meme's on the other hand, well, you know how those things go!

~ The middle initial of J stands for James. A simple name. Philip James Coulson
~ He’s a fast driver. “Bat out of hell” was coined for Phil. Some people might swear that he’s trying to reach the goal of talking his way out of speeding tickets in every state or country.
~ He really just likes to go fast...
~ He likes going to waffle houses but never orders waffles. Pancakes are better.
~ Phil was born and raised in Boston Massachusetts (this is now considered canon from the wiki page)
~ He played football in high school and lacrosse in college.
(Some RPs go with Track and wrestling, not football)
~ He likes ginger ale soda best. The cheap kinds tend to be spicier but he likes them all.
~ Little donuts are love. He likes both the powder and waxy chocolate ones. The little brown ones are almost never considered but once in a while he will crave them only.
~ Phil sleeps sprawled across the center of a bed, like a man who’s been single for far too long that he’s forgotten how to share. Arms out, covers twisted, right arm out closest to where his gun is hidden, left arm tucked under the pillow.
~ Sleeping around others however he is much more protected and contained.
~ Knows every single word to Mr. Tamborine Man (http://www.youtube.com/watch?v=06rGW0AQGiY)
~ Parents are named Robert and Julie. Both are reported dead. (Phils MCU Wiki info)
(Old headcanon: Still used in some verses) Parents are good people. Both are still alive and just assume Phil is a paper pusher. They don’t see him often but he sends postcards to them from different ‘conventions’ he ‘attends’ just to send his love.
~ The cellist is named Katie. He met her in New York. They had a thing for a while. She moved back to Portland which he's not too upset about. It's because things are strained between them. He puts work first far too often and he can not explain what he does to her truthfully. It caused problems with the relationship. She's still willing to try with him, but she needed to move back to her home city to be happy. He's willing to let her go, but staying friends with her.
~ In a Clint/Coulson version of the Cellist, Phil has said that he is dating a cellist mostly as a cover. So as not to lie completely, Clint does, after all use a bow...
~ Was in the army - A Ranger
(Recognizing that I volunteered as a Ranger, fully knowing the hazards of my chosen profession, I will always endeavor to uphold the prestige, honor, and high esprit de corps of my Ranger Regiment.
Acknowledging the fact that a Ranger is a more elite soldier who arrives at the cutting edge of battle by land, sea, or air, I accept the fact that as a Ranger my country expects me to move further, faster and fight harder than any other soldier.
Never shall I fail my comrades. I will always keep myself mentally alert, physically strong and morally straight and I will shoulder more than my share of the task whatever it may be, one-hundred-percent and then some.
Gallantly will I show the world that I am a specially selected and well-trained soldier. My courtesy to superior officers, neatness of dress and care of equipment shall set the example for others to follow.
Energetically will I meet the enemies of my country. I shall defeat them on the field of battle for I am better trained and will fight with all my might. Surrender is not a Ranger word. I will never leave a fallen comrade to fall into the hands of the enemy and under no circumstances will I ever embarrass my country.
Readily will I display the intestinal fortitude required to fight on to the Ranger objective and complete the mission though I be the lone survivor.
Rangers Lead The Way!!!)
~ He spent some time in the NSA (National Security Agency)
~ He actually does own jeans and t-shirts. His favorite shirt is a black Ranger shirt that has seen better days. Faded and with a few small holes. Left over from his Army days. It's mostly for down time or sleeping now. Sometimes work outs.
~ He has a pair of flannel Captain America PJ pants that he likes to wear on cold winter nights. It's nothing creepy! It was a gift and they are comfy. It's like anyone with normal print PJ pants. He does love them though. Pair this with his ranger shirt for a good nights sleep.
~ There IS a difference between Phil and between Coulson. Coulson is a straight laced agent. Phil is the softer more human side. There are lots of little details in this...
~ He likes musicals. “Singing In The Rain” being his favorite of all.
~ Actually enjoys the song “Secret Agent Man” and will whistle the tune often enough.

~ He has more than a Vintage set of Trading cards of Captain America. He also has a small collection of other ‘superhero’ cards, when they come around. If he ever sees the day that the Avengers have their own cards? You can be sure he would have a secret stash of them somewhere. Though they won’t be as important as his Vintage Set...
~ The Vintage Set is a collection of 9 cards (until canon gives me a number, 9 seems nice). Edit: HAHAHA CANON NUMBER WAS 9!!!
~ He’s a comic book fan. Even at this age. He has a collection that he tells no one about. Once in awhile he will pick one up for the fun of it. He loves anything with good pure heroes in it.
~ He actually enjoys bad reality TV. It's a way to relax, unwind and numb his brain for a moment. Also a great way to look into the lives of other people who don't have it all under control like he does.
~ He likes cheap beer but wont say no to a good pricey one. Just that if he were to drink beer it would be in his off time (which he really never has) and in his off time he's a simple man. A simple beer will do.
~ He likes top shelf alcohol however. In this he can be a bit picky.
~ However, he's not much of a drinker! He doesn't like to lose his control that much.
~ Brand of Suits? Hugo Boss. (As stated on Clark Gregg's twitter, Coulson wears a lot of Hugo Boss... and there as nothing wrong with that *grins*) though he does sometimes have better suits in his closet.
~ He went through a small phase when he was younger of saying "Oh for Cap's sake!" instead of 'craps sake'. He does NOT use this now a days... at least not out loud. :| Or around people.
~ He doesn't care for the saying of "Kill two birds with one stone." After all, the SHIELD mascot is an eagle and hawks are birds too...
~ A bit of a card shark. Picked it up from the military years. he likes to play with shuffling the deck, as well as knows how to count cards. This comes in handy for simple and fast money on weird missions.
~ Extending his family, I tend to say he has a older sister named Sarah. He's fairly close to her yet she still doesn't know exactly what he does. After the attack on New York however, she knows, and keeps a collection of news pages of things she thinks has his touch to it. Sarah has a couple of children, which keeps his mom happy since he has none.
~ Yes, Coulson Lives! I will forever play that he lived through it some how. It can be played MANY different ways but he lived damn it.
